Smoked Salmon Linguini with Bechamel Sauce
  • 2 (9 ounce) packages linguini
  • 1 1/4 cups milk
  • 1/4 small onion
  • 1 bay leaf
  • 2 whole cloves
  • 1 pinch ground nutmeg
  • 1/4 cup butter
  • 1 red bell pepper, chopped
  • 1/2 pound fresh asparagus, trimmed and quartered
  • 10 ounces fresh mushrooms, sliced
  • 1 pound smoked salmon, chopped
  • 2 tablespoons all-purpose flour
DIRECTIONS
  1. Bring a large pot of water to a boil, and cook the linguini 7 to 8 minutes, or until al dente. Drain, and transfer to a large bowl.
  2. In a saucepan over low heat, simmer the milk, onion, bay leaf, cloves, and nutmeg about 15 minutes. Remove from heat, and discard the onion, bay leaf, and cloves.
  3. Melt 2 tablespoons butter in a large skillet over medium heat. Stir in the red bell pepper and asparagus, and cook about 3 minutes. Stir in the mushrooms, and continue cooking until tender. Mix in the smoked salmon, reduce heat to low, and cook until heated through.
  4. Melt the remaining 2 tablespoons butter in a saucepan over medium heat, and slowly whisk in the flour until smooth. Thoroughly blend in the warmed milk. Stir into the skillet with the salmon mixture.
  5. Spoon the salmon and sauce mixture into the bowl with the cooked pasta, and toss to coat.


Sofie's Easy Lasagna
  • 10 ounces lasagna noodles
  • 1 1/2 pounds lean ground beeflasagna
  • 3 cups cottage cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 2 tablespoons dried parsley
  • salt and pepper to taste
  • 1 (6 ounce) can tomato paste
  • 2 (6.5 ounce) cans tomato sauce
DIRECTIONS
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
  3. In a skillet, brown ground beef. Using a fork, mix cottage cheese, eggs, garlic powder, parsley, salt and pepper. In a separate bowl combine tomato paste and tomato sauce.
  4. In a 9x13 inch baking pan, layer noodles, ground beef, tomato sauce mixture and cottage cheese mixture. Two layers of each will fit. Cover with tin foil and bake for 30 minutes. Remove tin foil the last 8 minutes of baking time.


Pineapple & Crab Pizza
  • 2 (10 ounce) cans refrigerated pizza dough
  • 2 (6 ounce) cans crabmeat, drained and flaked
  • 1 cup canned pizza sauce
  • 1 (8 ounce) can pineapple chunks, drained and roughly chopped
  • 1 (8 ounce) package light cream cheese, cubed
DIRECTIONS
  1. Preheat the oven to 400 degrees F (200 degrees C). Grease a pizza pan or cookie sheet.
  2. Spread both cans of dough out to cover the prepared pan, sealing any seams. Spread a thin layer of pizza sauce over the crust, and dot with cream cheese cubes. Sprinkle shredded crabmeat over, then pineapple pieces.
  3. Bake for 12 to 15 minutes in the preheated oven, until the crust is lightly browned.
